AFood is much more than simple nutrition. Across the world, traditional dishes have been passed down through generations as a form of cultural heritage. These recipes carry memories, values, and identities that connect people to their ancestors. In Bangladesh, for example, dishes such as hilsa curry and pitha are deeply linked to national celebrations and seasonal festivals. Therefore, food can be seen as a living record of a community's history and beliefs.
BTraditional cooking methods are often preserved carefully within families. Grandmothers teach their grandchildren how to prepare special dishes using techniques that have existed for centuries. However, as urbanisation increases and modern lifestyles become busier, many of these techniques are gradually being forgotten. Despite this concern, several cultural organisations have started programmes to document and teach traditional cooking. These efforts are considered important because they protect skills that cannot easily be replaced.

Although different regions prepare rice differently, its cultural importance remains widely recognised.
DThe globalisation of food has created both opportunities and challenges for cultural heritage. International fast food chains have become popular in many developing countries, including Bangladesh. As a result, younger generations are sometimes more familiar with foreign food brands than with their own traditional recipes. Nevertheless, food tourism has also grown significantly, and many travellers now visit countries specifically to experience authentic local cuisine. This trend has encouraged communities to take greater pride in their culinary traditions.
EProtecting food as cultural heritage requires action from governments, educators, and communities. Some countries have successfully had their traditional cuisines recognised by international organisations such as UNESCO. This recognition helps raise awareness and attract global interest. Schools can also contribute by including lessons about traditional food culture in their curricula. Ultimately, when people value and practise their food traditions, those traditions survive and continue to enrich human civilisation.
